Easy Pumpkin Bread

Pumpkin bread is the perfect treat to welcome fall and has become a staple in my house from September to December. The second pumpkin is stocked in my local grocery store, my family urges me to make this bread. While it may seem like a lot of sugar, the salt perfectly balances the sweetness. The pumpkin pie spice and vanilla add a warm flavor to the bread that make it nearly impossible to only have one slice.

Ingredients:
  • 2 cups flour 

  • 1 tsp baking soda 

  • 1 tsp baking powder 

  • 2 tbsp pumpkin pie spice 

  • ½ tsp salt 

  • 15 oz pumpkin puree 

  • 1 ½ cups granulated sugar 

  • ½ cup brown sugar 

  • 3 eggs 

  • 1 cup vegetable oil 

  • 1 tbsp vanilla 


Directions:
  1. Start by preheating your oven to 350℉. Grease a 9” loaf pan with cooking spray and set aside. 

  2. In a medium bowl add the flour, baking soda, baking powder, pumpkin pie spice, and salt. Whisk together to combine. 

  3. In a large bowl combine the pumpkin puree, sugars, eggs, vegetable oil, and vanilla. Whisk until just combined. 

  4. Add the flour mixture to the wet ingredients and mix until a thick batter forms. 

  5. Add the batter to your greased loaf pan and bake for 60-65 minutes as needed. To check the inside of the bread, insert a toothpick into the middle and pull it out. If the bread is ready, the toothpick will remain clean; if the bread needs to be baked longer, the batter will coat the toothpick. 

  6. Let cool for at least 30 minutes before slicing and serving.
